Gluten Free Pretzel Crisps Minis
A Variety of Hot Dog Toppings
To make the gluten free pretzel buns, line an egg crate with aluminum foil. Melt cocoa butter on low in a crock pot or in a double boiler. Dip the edge of two Pretzel Crisps, then join them together to sit in the cavity of the egg crate. Pour a little cocoa butter on top of the joint edges, then place in refrigerator to cool and harden.
Heat up cocktail wieners and cool on a paper towel.
Dice a variety of toppings from the grocery store. Some suggested flavor combinations: French onion soup- Caramelized onions, melted Gruyere cheese BLT- Shredded lettuce, thinly sliced mini cherry tomatoes, crumbled bacon, garlic aioli Prosciutto wrapped- Sliced asparagus, a thin piece of prosciutto, Gorgonzola cheese crumbles, balsamic glaze. California- Diced cucumber and chopped julienned carrots. Topped with Greek goddess dressing.
*Tip: Cocoa butter melts, so make sure to keep cocktail wieners on the cool side. Do not expose the gluten free pretzel buns to warm temperatures.

36 Chipotle Cheddar Pretzel Crisps
2 Cups Roasted Chicken, Chopped
2 Cups Hickory Flavored Barbecue Sauce
8 Slices Bacon, Cooked and Crumbled
2 Cups Shredded Sharp Cheddar Cheese Blend
1 Small Minced Chipotle Pepper, Plus 1 Teaspoon Adobo Sauce 1 Teaspoon Maple Flavoring
6 Green Onions, Thinly Sliced
Preheat oven to 425 degrees. Line a 12x18 inch baking sheet with parchment paper and lay 36 Chipotle Cheddar Pretzel Crisps on the sheet.
In a medium microwave safe bowl, mix together barbecue sauce, chipotle pepper and adobo sauce. Warm the sauce in the microwave for 2 minutes, then stir in 1 teaspoon of maple flavoring.
To assemble, arrange 1 teaspoon of chopped chicken on top of Pretzel Crisps. Drizzle the chicken with 1 teaspoon of barbecue sauce and sprinkle with 1 teaspoon of cheese. Place into the preheated oven and bake for 3-5 minutes, until the cheese has melted and the sauce is bubbly. Remove from the oven and arrange on a serving platter. Sprinkle each crisp with crumbled bacon and garnish with chopped green onion. Serve any remaining maple chipotle barbecue sauce on the side.
