Recipes: Make Noodles & Co.’s New BUFF Bowls at Home!
Love Noodles & Co.? We do too! This month, the fast-casual restaurant debuted their new BUFF Bowls — and they are nothing short of delicious! Check out the recipes below to make your own homemade version.
BUFF Pesto
Servings: 4-6
Ingredients:

1 cup pesto
-
1⁄2 cup white wine
-
2 Tb. olive oil
-
10 oz. tomatoes, diced
-
10 oz. white mushrooms, sliced
-
4 oz. Parmesan cheese
-
1 lb. baby spinach
-
1 1⁄2 lb. cooked pork
Directions:

In a sauté pan heat tomatoes and mushroom in olive oil for about 2 minutes or until softened

Add white wine to the pan and reduce until only 1⁄4 the liquid is remaining
-
Add your favorite pesto into pan and bring to a low simmer
-
Toss in cooked pork or simply leave vegetarian

Place sautéed ingredients over a bed of spinach, garnish with Parmesan cheese
BUFF Tuscan Fresca
Servings: 4-6
Sauce Ingredients:

1⁄4 cup balsamic vinaigrette
-
3⁄4 cup olive oil
-
2 cloves garlic, chopped
-
2 tsp. mustard
-
2 Tb. Italian herb blend
Ingredients:

1⁄2 cup white wine
-
10 oz. tomatoes, diced
-
10 oz. white mushrooms, sliced
-
4 oz. Feta cheese
-
1 lb. baby spinach
-
1 1⁄2 lb. cooked chicken
Directions:
-
Blend all ingredients for the sauce together and put aside
-
In a sauté pan heat tomatoes and mushroom in olive oil for about 2 minutes or until softened

Add white wine to the pan and reduce until only 1⁄4 the liquid is remaining
-
Add 1⁄2 cup of sauce into pan and bring to a low simmer
-
Toss in cooked chicken to coast with sauce or simply leave vegetarian

Place sautéed ingredients over a bed of spinach, garnish with feta cheese
