BUFF Pesto

Servings: 4-6

Ingredients:

  • 1 cup pesto

  • 1⁄2 cup white wine

  • 2 Tb. olive oil

  • 10 oz. tomatoes, diced

  • 10 oz. white mushrooms, sliced

  • 4 oz. Parmesan cheese

  • 1 lb. baby spinach

  • 1 1⁄2 lb. cooked pork

Directions:

  • In a sauté pan heat tomatoes and mushroom in olive oil for about 2 minutes or until softened

  • Add white wine to the pan and reduce until only 1⁄4 the liquid is remaining

  • Add your favorite pesto into pan and bring to a low simmer

  • Toss in cooked pork or simply leave vegetarian

  • Place sautéed ingredients over a bed of spinach, garnish with Parmesan cheese

BUFF Tuscan Fresca

Servings: 4-6

Sauce Ingredients:

  • 1⁄4 cup balsamic vinaigrette

  • 3⁄4 cup olive oil

  • 2 cloves garlic, chopped

  • 2 tsp. mustard

  • 2 Tb. Italian herb blend

Ingredients:

  • 1⁄2 cup white wine

  • 10 oz. tomatoes, diced

  • 10 oz. white mushrooms, sliced

  • 4 oz. Feta cheese

  • 1 lb. baby spinach

  • 1 1⁄2 lb. cooked chicken

Directions:

  • Blend all ingredients for the sauce together and put aside

  • In a sauté pan heat tomatoes and mushroom in olive oil for about 2 minutes or until softened

  • Add white wine to the pan and reduce until only 1⁄4 the liquid is remaining

  • Add 1⁄2 cup of sauce into pan and bring to a low simmer

  • Toss in cooked chicken to coast with sauce or simply leave vegetarian

  • Place sautéed ingredients over a bed of spinach, garnish with feta cheese
