Cabbage-Pear Soup

Ingredients:

  • 1 head of Napa Cabbage — shred and remove green tops

  • 1 Onion — thinly slice

  • 4 Cloves of garlic — thinly slice

  • 1 Pear — peel, thinly slice

  • 1 Slice of ginger

  • 1 Cup of whole milk

  • 1 Cup of water or vegetable stock

  • 1/4 Stick of butter, unsalted

  • 1 Tbs of canola oil

  • 1 Tbs of kosher salt

Directions:

  • In a hot pot add canola oil

  • Saute onion, garlic, and pear for 3-5 minutes on medium heat until soft (do not get any color on the vegetables)

  • Add shredded cabbage

  • Add a pinch of kosher salt, butter, cover with lid, and simmer on low heat for 30-45 minutes until the vegetables are very soft and release their natural juices

  • Add milk and enough stock to cover the vegetables (if needed)

  • Simmer for additional 10 minutes.

  • Transfer hot solids carefully to a blender and add enough liquid to blend into a vortex gradually starting from low speed to high speed until very smooth

  • Season again with kosher salt if needed

  • Garnishing tips: spaetzle, roasted pears, pickled currants, croutons, lemon oil
