Recipe: Make this Delicious Cabbage-Pear Soup for Dinner Tonight!

Cabbage-Pear Soup
Ingredients:

1 head of Napa Cabbage — shred and remove green tops

1 Onion — thinly slice

4 Cloves of garlic — thinly slice

1 Pear — peel, thinly slice

1 Slice of ginger
-
1 Cup of whole milk
-
1 Cup of water or vegetable stock
-
1/4 Stick of butter, unsalted

1 Tbs of canola oil
-
1 Tbs of kosher salt
Directions:

In a hot pot add canola oil

Saute onion, garlic, and pear for 3-5 minutes on medium heat until soft (do not get any color on the vegetables)

Add shredded cabbage

Add a pinch of kosher salt, butter, cover with lid, and simmer on low heat for 30-45 minutes until the vegetables are very soft and release their natural juices

Add milk and enough stock to cover the vegetables (if needed)

Simmer for additional 10 minutes.

Transfer hot solids carefully to a blender and add enough liquid to blend into a vortex gradually starting from low speed to high speed until very smooth

Season again with kosher salt if needed
