Grilled Salmon with Pinot Grigio Blackberry Sauce

SALMON:

Servings = 4

Ingredients:

  • 4 Salmon fillets, skin on

  • 4 Tbsp of olive oil

  • Salt and pepper to taste

Directions:

  • Heat grill to 375 degrees, turning on only half of the burners

  • Coat the fillets with olive oil, salt and pepper

  • Grill salmon over indirect heat for 8 minutes on each side, starting with skin side down

  • Remove from grill and place on a large platter. Spoon Woodbridge by Robert Mondavi Pinot Grigio blackberry sauce over top and serve

BLACKBERRY SAUCE:

Servings = About 2 cups

Ingredients:

  • 12 Ounces of fresh blackberrries

  • 1/8 Cup of sugar

  • 1 Tablespoon of fresh lemon juice

  • 1 Tablespoon of Woodbridge by Robert Mondavi Pinot Grigio

  • 1/4 Teaspoon of lemon zest

Directions:

  • Bring all ingredients to simmer over medium heat in a heavy bottomed saucepan, stirring often

  • Cook for about 10 minutes or until slightly reduced

  • Serve at room temperature over grilled salmon or your favorite grilled meat
