St. Patrick's Day is right around the corner, which means eating green foods is only appropriate!
SIMI Winery Executive Chef Kolin Vazzoler created an easy to make recipe for avocado toast with smoked trout paired with refreshing Sonoma County Chardonnay — and you'll be lucky to taste it!
Check out the recipe below.
1 ripe avocado
Juice of 1/4 lemon
Juice of 1/4 lime
Sea salt, to taste
Cracked black pepper, to taste
1 tablespoon parsley, chopped
8 slices rustic baguette, toasted
1 piece smoked trout, bones removed and flaked
Extra-virgin olive oil, for drizzling
Cut the avocado in half, remove pit, and scoop the flesh into a bowl
Add the lemon, lime juice, sea salt and black pepper
With a fork, mash the ingredients together, keeping slightly chunky
Spread avocado mix onto toasts and garnish with flaked smoked trout and a drizzle of olive oil
